Why is it that I never fall in love so easily (like love at first sight, etc), and only with someone when I've become familiar with them, no even just a small portion about them, have had an emotional bond, or are friends?

It's normal. It's fine if you can go from 0-100 without having to get to know someone but it's also fine if you can't.

If you're looking for, like, a scientific/psychological reason...this is not something that we understand all that deeply yet! I personally think there's too many confounding factors for us to truly understand how and why feelings like this develop differently for different people.
